Grilled Chicken Street Tacos

- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon chilli powder
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 12 small corn tortillas
- 1/2 cup diced onion
- 1/2 cup chopped fresh cilantro
- 2 limes, cut into wedges
- Optional toppings: avocado slices, salsa, sour cream, shredded cheese
Step 1
Start by preheating the grill to medium-high heat (190°C to 230°C).
Step 2
Begin by seasoning the chicken breasts with 1 tablespoon of chili powder, 1 teaspoon of ground cumin, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1/2 teaspoon of smoked paprika, salt, and pepper to taste. Rub the seasoning well into the chicken to preserve the taste and moisture.
Add two tablespoons of olive oil, making sure the chicken breasts are well coated. Don’t be afraid to use your hands to ensure the whole chicken breast is evenly coated with oil and seasoning!
Step 3
Disclaimer – Prior to adding the chicken to the grill, check that the grill is clean and slightly oiled up to prevent the chicken from sticking onto the grill.
Proceed then with placing the chicken on top of the grill and cooking each for about 6 to 7 minutes per side.
To check if the chicken is ready, stick a thermometer into the thickest part of the chicken and ensure it reaches 75°C. Alternatively, you can cut open a piece to make sure the chicken is fully cooked.
Step 4
Once the chicken is well cooked, remove it from the grill and let it rest for a few minutes before slicing into thin strips.
While the chicken is resting, warm the corn tortillas on the grill for about 1-2 minutes on each side, or until they are pliable and have slight grill marks.
Step 5
Assemble the tacos by placing a few strips of grilled chicken into each warm corn tortilla.
Top with diced onion and chopped fresh cilantro.
Squeeze a lime wedge over each taco for added zest.

Arrange the tacos on a serving platter.
Serve immediately with optional toppings such as avocado slices, salsa, sour cream, and shredded cheese.
